Debut of Mouthwatering Monday Recipes


Good morning and welcome to the debut of my Mouthwatering Monday collection of Romance Writing with a Twist recipes. Each Monday (fingers crossed!) I'll post a recipe specifically created for one of my books.

Today, I'll start with COCONUT CONCOCTION CAKE -- a delicious dessert (and family favorite!) based upon my paranormal romantic suspense THE COMING, a Dream Realm Award WINNER.

COCONUT CONCOCTION CAKE

In my paranormal romantic suspense at Awe-Struck Publishing--2004 Dream Realm WINNER, THE COMING--coconuts are plentiful on the desert island. Larissa uses coconut shreds, tern eggs, goat milk, and ground nuts to create a mouthwatering concoction for Jack and his men. Here’s a scrumptious recipe that will make your mouth water too!

1 1/4 c. flour, sifted
1 1/2 c. sugar
3 t. baking powder
1 t. salt
1/2 c. butter, slightly melted
1 c. milk
2 eggs
1 t. vanilla extract
1c. flaked coconut

* Preheat oven to 350 degrees.
* In large bowl, sift flour with sugar, baking powder, and salt.
* Add butter and milk.
* Mix at low speed for 2 minutes.
* Add eggs and vanilla.
* Mix at low speed for 2 minutes.
* Stir in coconut, then pour batter into two greased 8-inch pans.

* Bake for 30 to 35 minutes, until golden brown.
